That change is called crystallization, and it is normal. The honey may become cloudy, grainy, thick, or nearly solid, but crystallization alone does not mean it has spoiled.

The original jar is usually suitable as long as it closes securely and remains undamaged. For transferring honey, a clean, completely dry glass jar with a tight lid is a practical option; food-grade plastic may also work for everyday use.
Avoid storing honey for years in reactive metal containers. Honey is acidic and may eventually pick up a metallic taste from metal packaging.
4. Keep water out of the jar
A damp spoon may look harmless, but repeated moisture introduction works against honey’s natural stability. Use a clean, dry utensil, and do not dip one covered in tea, butter, yogurt, or toast crumbs back into the container.
This rule becomes especially important in large jars that may remain open for months. Portioning bulk honey into smaller, tightly closed containers can reduce how often the full supply is exposed to air, utensils, and kitchen humidity.
5. Buy for your actual pace
The giant jar may offer a lower price per ounce, but value disappears when the container is awkward to seal, pour, or store. If your household uses honey slowly, two smaller jars may be easier to manage than one heroic tub.
Keep one working jar in the pantry and leave the backup sealed until needed. That simple rotation limits exposure and gives you a cleaner, fresher-tasting reserve.
How to Keep the Texture Smoother
Storage can delay crystallization, but it cannot override the honey’s natural composition. Start by keeping the jar at a stable room temperature rather than moving it repeatedly between a cold cupboard, warm countertop, and refrigerator.
Avoid dropping crumbs or crystallized honey back into a smooth jar. Existing sugar crystals may act as “seeds,” giving new crystals an easy place to form.
A wide-mouth glass jar is useful when texture matters more than pourability. If the honey eventually thickens, you can scoop it easily and warm the container more evenly than a narrow squeeze bottle.
You can also embrace controlled crystallization instead of fighting it. Creamed honey is intentionally produced with many fine crystals, creating a smooth, spreadable texture rather than the larger, rougher crystals that may develop spontaneously.
My practical rule is to match the format to the job. Liquid honey is convenient for tea and dressings, while creamed or naturally crystallized honey stays neatly on toast instead of sliding directly onto your sleeve.
How to Rescue a Crystallized Jar
Place the closed jar in a bowl or saucepan of warm water, keeping the water below the lid. Let it sit, stir the honey when it becomes movable, and replace the water as it cools until the crystals dissolve.
Use gentle heat rather than boiling water. High temperatures and prolonged heating may darken honey, alter its flavor, and reduce the activity of some naturally occurring enzymes.
I would avoid blasting the entire jar in the microwave. Microwaves can create uneven hot spots, making it easy to overheat one area while another remains stubbornly solid.
Warm only the amount you expect to use when possible. Honey can crystallize again, and repeatedly heating the entire supply may gradually affect its aroma, color, and flavor.
Do not add water to make the honey thinner. It may improve the texture temporarily, but it also changes the product’s moisture balance and can shorten its useful storage life.
Crystallized, Fermented, or Simply Older?
Crystallized honey may look cloudy or grainy and can become very firm, but it should still smell recognizably like honey. Darkening alone may reflect age, floral variety, or heat exposure rather than immediate spoilage.
Fermentation is a different situation. Oregon State University Extension advises discarding honey that develops bubbling or a sour odor, both of which may signal spoilage.
Use this quick cupboard check:
- Grainy but pleasantly scented: Probably normal crystallization.
- Bubbling without intentional fermentation: Discard it.
- Sour, alcoholic, or clearly unpleasant odor: Discard it.
- Visible mold or obvious foreign contamination: Do not taste-test it.
These recommendations apply to plain honey. Honey mixed with fresh garlic, fruit, herbs, or other moist ingredients has different storage and food-safety considerations and should not automatically be treated as shelf-stable.
